Menacingsprite’s Cauliflower Broccoli Cheese Soup
So, as I have been slowly transforming with this new way of eating. I feel like I’ve turned over a new leaf. Whoever said that eating low carb disallows you from eating delicious food was dead wrong! I’ve had some of the most delicious foods since I have started eating this way. Today I am going to share with you the delicious soup I made for lunch today.
Ingredients: (total time about 30 mins)
1 – Boneless Skinless Chicken Breast (4-6 oz)
1 small white onion diced
2 C – Water
1/2 head of Cauliflower (Broken up into Florets)
1/2 head of Broccoli (Broken up into Florets or you can use frozen)
2c – Heavy Whipping Cream
2c – Finely Shredded Cheddar Cheese
1 1/2 tbsp – Unsalted Butter
1 can – Chicken Broth
1 tbsp Bouillon (Gluten Free)
1 tsp of Cumin
1/2 tsp Paprika
1 tsp of Garlic Salt
1 tsp of Salt
In a large pot, boil the chicken and white onion in 2 cups of water. While the chicken is cooking get your cauliflower and broccoli and break them up into florets. If you are using the frozen kind, just measure about 1.5 cups of each (dry measure) and set aside.
In a separate saucepan, place the Heavy Whipping Cream, cumin, paprika, garlic salt, salt and the Butter to simmer be careful not to let it boil. Stir frequently. When it becomes hot (but not boiling) slowly mix in the cheese (about 1/4 cup at a time) and let it melt into the mixture before adding more. Once all of the cheese is melted into the whipping cream mixture remove from heat and set aside.
At this point the chicken should be close to being finished cooking, if you’re using fresh cauliflower and broccoli you want to add the cauliflower in first and allow it to become slightly cooked then add your broccoli till cooked. Warning, you do not want it to become mushy. Then add your bouillon and chicken broth to the chicken, broccoli and cauliflower mixture. Get to a boil then add the cheese mixture.
Let the soup boil for about 5 minutes and then allow to cool then it should be ready to eat.
Each serving is 1.5 cups.
